Memorial Service for 50-75 people

We just got home from catering for my friend Maud's mother's memorial reception in New Westminster, BC. There were close to 60 people at the Glenbrook Park Amenities Centre and the initial concensus is that everyone loved the food. We had to work extra hard to get everything cooked for the start of lunch at 1pm. Rowena and I woke up before 5am to make sure everything was prepared fresh. It started to snow today so delivery was a challenge. Thank God kuya Tommy was available to drive us to New Westminster and also, that Patullo Bridge opened early. I'm just glad we got help out Maud and offered our condolensces for her loss. I regret not making it to the mass at St. Peter's church but we were so busy. I'm glad to have met some of her family.

Here is the list of filipino food that was prepared:

Pansit Bihon
Spring Roll
Vietnamese Roll (shrimp)
BBQ chicken
Chicken Leg with stuffing
Beef Calderetta
Empanada
Deep fried squid
Seafood Vegetables
Mango Salad
Special Bibingka with red bean paste and young coconut
Fruit salad

Many thanks to Kuya Tommy for helping out on such short notice. Special thanks to Rowena for helping cook and to my niece VJ for babysitting Kyle.
